Summary
The present invention relates to a method for producing a highly functional gati gum by reducing the molecular weight of an emulsion stabilizer gati gum to a short time treatment in a high temperature and high pressure environment, and comprises the following steps.
(1) A step of continuously or intermittently supplying the raw material Gati gum aqueous solution to the reactor.
(2) A step of adjusting the aqueous solution by exposing the raw material gati gum aqueous solution to an environment of a temperature in the range of 120 to 300 degree Celsius and to pressure in the range of 0.2 to 30 MPa for 0.5 to 35 seconds by heating in the reactor to reduce the molecular weight of gati gum.
(3) A step of continuously or intermittently taking out the low molecular weight gati gum aqueous solution from the reactor.
(4) A step of cooling the low molecular weight Gati gum aqueous solution to 100 degree Celsius. or less within 20 seconds at a cooling rate of 10 to 200 degree Celsius/second.
The weight-average molecular weight of the low-molecular weight Gati gum obtained by the production method of the present invention is in the range of 0.020 to 1.10*10^6, and particularly preferably in the range of 0.040 to 0.30*10^6. Also, the obtained low molecular weight gati gum can function as an emulsifier and can form emulsified particles. The emulsifying property is higher as the size of the emulsified particles is smaller, and according to the embodiment of the present invention, the particularly preferable size of the median diameter (volume standard) of the emulsified particles is in the range of 0.2 to 0.8 micrometer.
